Key Areas of Responsibility:

  • Fillet the relevant raw material as required by the Company to meet customer and legal standards.
  • Maintain food hygiene standards as required by law.
  • Use equipment such as knives and blade correctly – following the Company’s knife and blade control policy and procedure.
  • Ensure products meet the desired specifications as set by each customer.
  • Ensure traceability is maintained throughout the production process.
  • Complete any relevant paperwork in accordance with Company requirements.
  • Maintain PPE and utensils given to the required standard.
  • Maintain knowledge of HACCP, basic food hygiene and GMP (after initial training).
  • Understand and practise the requirements for different trims and cuts.
  • Maximise yield requirements for different cuts and species.
  • Handle fish correctly with due care and in accordance with instruction.
  • Carry out all lifting tasks in line with instruction and Manual Handling Instruction.
  • Maintenance and proper usage of equipment used for movement of materials.
  • Follow instructions for issue and re-issue of equipment and ensure it is not used by others.
  • Any other reasonable request from your supervisor/manager.
  • Liaise with other departments as necessary.
  • Report any faults within the production line.
  • Report any issues regarding the quality of the product – either raw material or packaging.
  • Report any health and safety issues or concerns to supervisors/managers.
  • Ensure that the standard of housekeeping in the working area is high and the working area is safe.
  • Comply with Health and Safety requirements.
  • Participate in any development and training programs put in place in line with attaining company goals and aims.

  • Aberdeen AB12 3AN: reliably commute or plan to relocate before starting work (preferred)

Experience:

  • filleting: 1 year (preferred)
